Artisanal Nagano pork belly bacon
Our bacon is made from Nagano pork belly, a meat renowned for its exceptional marbling and natural tenderness.
 Each piece is carefully brined for several days under vacuum in a homemade brine flavored with pure maple, juniper berries, sumac, garlic, and brown sugar. This slow infusion allows the aromas to penetrate deeply into the flesh while perfectly balancing the sweet, spicy, and resinous notes.

Subsequently, the flank is gently smoked for many hours, developing a beautiful mahogany color and a subtle smoky aroma.
 

Instructions :

Place the pan over low to medium-low heat .

The goal is to slowly melt intramuscular fat without burning the sugars in the brine.
Signs of perfect cooking
  • The fat is almost transparent and shiny.
  • The meat takes on a beautiful, more intense mahogany color.
  • The edges are slightly crispy, but the slice remains soft and fluffy to the touch.
